GN Pan Sizes Explained: Sizes, Depths and Lids
A GN size describes the top-down size of a gastronorm pan. Its depth is a separate measurement. Match the size to your equipment first, then choose the depth, material and lid for the job.
Choose in this order
- GN size: match the size specified for your equipment.
- Depth: check the clearance and maximum pan depth it accepts.
- Material and lid: choose for storage, preparation, cooking or service.

GN pan sizes in millimetres
GN 1/1 is the reference footprint. The diagram shows how common smaller sizes compare, with every grey outline representing the same GN 1/1 size. It illustrates relative size, not an equipment cut-out or a guaranteed pan layout.

| GN size | Nominal external size |
|---|---|
| GN 1/1 | 530 × 325mm |
| GN 1/2 | 325 × 265mm |
| GN 1/3 | 325 × 176mm |
| GN 1/4 | 265 × 162mm |
| GN 1/6 | 176 × 162mm |
| GN 1/9 | 176 × 108mm |
| GN 2/3 | 354 × 325mm |
| GN 2/4 | 530 × 162mm |
| GN 2/1 | 650 × 530mm |
Dimensions above show the longer side first. These are nominal external footprints; check the individual product and equipment specification before ordering. A GN fraction describes a size in the system, not a litre capacity.
Choose the pan depth separately
A GN 1/3 pan at 65mm depth has the same nominal footprint as a GN 1/3 pan at 150mm depth. The deeper pan needs more clearance underneath. Common options include 20, 40, 65, 100, 150 and 200mm; availability depends on the pan.
Check your equipment’s maximum pan depth and support arrangement. For food quantities, use the product’s stated litre capacity rather than calculating capacity from the outside dimensions.
Solid, perforated or plastic?
- Solid stainless steel: compare for preparation, storage and suitable cooking or holding applications.
- Perforated stainless steel: allows liquid to drain and can suit steaming applications. It will not contain liquids like a solid pan.
- Plastic: useful for ingredient preparation and storage. Check the stated temperature range; a GN size does not establish suitability for ovens or hot holding.
Choose a matching lid
Start with the same GN size as the pan, then check compatibility with its material and range. Notched lids leave room for a serving utensil. Sealing lids are different from standard covers: an ordinary lid does not automatically make the pan leakproof.
Check whether the listing includes a lid or sells it separately. This matters when comparing a pan-only price with a pan-and-lid set.
Will it fit my bain marie, prep counter or oven?
Confirm the equipment’s stated GN size, accepted depth and supports. Smaller pans can share a larger GN opening, but suitable divider or support bars may be needed to hold them securely.
For replacements, check the equipment model as well as the old pan. A matching footprint alone does not confirm the right depth, support arrangement or suitability for the task.
